Easy Bean and Cheese Enchiladas

These were a discovery we made when we wanted to go out for Mexican but didn’t want to to spend the money because we are trying so hard to stay on budget. Brian disappeared into the kitchen and came out with these. Since then we make these instead of going out because they are sooooo good!
Here is what you need, this recipe makes 12 but you can adjust it by how many you want.
12 tortillas
1 can Pinto beans seasoned with onion
I can fat free refried beans
1 and 1/2 cup shredded mexican style cheese
1 onion finely diced and sauteed in butter until clear
1/4 c salsa (optional)
1. make a rue with 2 tbs butter and 4 tbs flour, add 1/4 tsp salt and dry mustard
2. Add 1 c milk to the rue and whisk until thickened. Turn off heat and add 1c of cheese, whisk until smooth.
3. Mix onion, beans salsa and 1/2 cup of the cheese together in a bowl
4. Fill tortillas and roll into enchilada shape.
5. layer in a casserole dish. After the first layer, cover with half of the cheese sauce, continue layering until you run out of bean filling.
6. Cover the top with remaining cheese sauce.
7. Bake at 350 for 25 minutes.
8. Serve with sour cream, guacamole, extra salsa, whatever you wish.
They are so good we once had them 3 times in week 😉
